Holiday Meals

Healthy Holiday Meals will be presented at Tappan Zee High School,
Orangeburg, NY on 11/19/95 at 1 pm.

The executive chef from Manhattan’s Plaza Hotel will be preparing a
healthy gourmet Thanksgiving menu — from appetize3rs through desserts —
for diabetics and their familes.

insulin pen warning

Well folks, now that the colder weather is upon us, it’s time for the
annual warning for the subset of insulin pen users who hold the little
white needle cap between their lips while injecting (those dextrous
enough to hold it between their fingers or those comfortable with
placing it on a table or desk need read no further):

warning warning warning: if you have used lip balm on your poor chapped
lips prior to injection, the little white cap will either be ejected
across the room or possibly just dribble down the inside of your shirt
depending on how severely this loss of grip startles you. This is not only
wasteful but also potentially quite astonishing to others who may be in
the room. Besides which you could put someone’s eye out. Think ahead. ;>

Shoe question

I developed a swelling in my left foot and shin back in May. It initally was thought to be cellulitis and later diagnosed as Charcot Joint. I’v spent the past 5 months in a walking cast, removed last week. I was simply given the name of a shoe store and told to get custom shoes made.My understanding is that a custom shoe can be made or shoe with extra depth can be bought and a special molded insert made.

I’m very interested in other’s experience.

Also, was this covered by your medical insurance?

Nutrition and Diabetes

earth-shattering and it is "low-tech" and easier to understand than
most abstracts.

Jenkins DJA, Jenkins AL. Nutrition principles and diabetes: A role
for"lente carbohydrates"?  Diabetes Care 1995;18(11):1491-8.

The current nutrition recommendations of the American Diabetes
Association (ADA) represent a thoughtful synthesis of much current data.
They depart from tradition by not advocating specific figures for total
fat and carbohydrate intake. Rather, since many issues are still topics
of scientific debate, they endorse the principle of individualization and
set suidelines accordingly. One topic that may be worthy of further
debate is the principle of "spreading the nutrient load", or lengthening
the absorption time. This principle covers the effect of altered meal
frequency, viscous dietary fibers, low-glycemic index foods, and
inhibitors of carbohydrate absorption. In its aimplest form it is
illustrated by studies of altered meal frequency ("nibbling vs gorging").
Reducing the size and increasing the frequency of meals has been ahown
acutely to result in lower mean blood glucose and insulin levels over the
day in type II diabetes and to result in reduced 24-h urinary C-peptide
losses. In the longer term in nondiabetic subjects, total and low-density
lipoprotein cholesterol levels are reduced, together with fasting
apolipoprotein B and serum uric acid levels, as additional risk factors
for coronary heart disease. these and other physiological effects make
slowing carbohydrate absorption ("lente carbohydrate") a potentionally
useful therapeutic modality. However, of th possible ways of slowing
absoption, only alteration in meal frequency was of general interest in
the current ADA nutrtion recommendations. Nevertheless, the effects of
slowing carbohydrate absorption by various means may have beneficial
netabolic effects in diabetes and may support the use of ethnic foods in
diets compatible with further modifications identified more favorably in
the current nutrition recommendations (e.g., increased use of
monounsaturated fat).

Diabetes and Leg and Toe Cramps..

I am interested in getting information about leg and toe cramps and
wonder if anyone knows any reason why a Diabetic may be more prone to
this problem.  It seems to occur only at night, and wakes the diabetic up
from a sound sleep.  If so, could you direct me to more information.  I’m
especially interested in finding out if there is any homepathic solution.

     With Thanksgiving coming up, I’ve been wondering.  Does anybody know of a
good source in the Washington DC or Baltimore area for sugar free apple or
pumpkin pies?

Beta carotene and lower bg readings

I’m a NIDDM, 46 year old female, being treated with diet and exercise.

I started taking beta carotene a few days ago (20,000 IU 3 times a day),
along with my other vitamins (if you’re interested in the list, e-mail
me), and have noticed a reduction in my bg readings.

This morning, I ate 2 apples, which usually shoots my bg up close to 200.
An hour or so after eating them, I felt funny, and thought my readings
would necessitate an exercise session, so I did a test.  My bg was 93,
20pts down from my fasting bg and the lowest in a week.

One hour after lunch today, I did a finger stick and my bg was 199.  Just
for a test, I took two 10,000 iu of beta carotene, and read a book for
half an hour, instead of exercising to bring it down as I usually do.
After 30 mins, my reading was 142. Now, ouch!, I just did another (it’s 2
hrs after eating) and it’s 126.  

Lunch consisted of 4 low fat baking powder biscuits, green beans, and 1/3
cup jelly belly jelly beans (strawberry cheesecake).  Yeah, I know, it’s
not balanced, but it’s the weekend & I felt wicked <grin>!

Anyone else had any similar experience with beta carotene?
